YaDa Chef Tip, Blanching

Blanching involves briefly dunking fruits or vegetable in boiling water to set color, flavor, and texture.
To successfully blanch green vegetables, the lid to the pot must be kept off to allow the acids they contain to evaporate, rather than trapping them in the cooking water and turning the vegetables brown.
This is a fallacy, comparing broccoli, green beans, and broccoli rabe in both covered and uncovered pots, the pH or acid level of the water is identical for each vegetable in both sets of water.
All vegetables turned bright green. The covered and uncovered batches tasted exactly the same.

Wine, Dealcoholized

There are alcohol-free wines claiming to have as much flavor as real thing, but are they a good substitute for regular wine?

After sampling both red and white version of two dealcoholized wines, national brands, neither had the complexity of real wine. They were a step above grape juice.

We believe this is due to the process in which the alcohol is removed. Some use a cold filtration process, passing the wine along meshlike membranes to remove the alcohol. The result is alcohol-free syrup which is diluted with water.

Another technique is known as the "spinning cone" method. The wine cascades down spinning, cone-shaped cylinders into a thin stream. Nitrogen gas is sprayed over the thin layer of wine to prevent any of the flavor compounds from becoming volatile and escaping.

When the wine is is heated to remove the alcohol, the nitrogen protects the flavors of the wine.

In the end, alcohol is reduced from 10 to 12 percent to 0.3 to 0.5 percent. Since some liquid evaporates in the process, a small amount of unfermented grape juice is added to the wine.

Note, sweet wines that are dealcoholized with the spinning-cone method retain distinct wine aromas and flavors.

When using the dealcoholized wines, you will notice and detect the sweet and less acidic notes in your dishes. You may use lemon juice or wine vinegar to cut the sweetness.

If you want to avoid wine with alcohol, Fre is a good choice. Otherwise, YaDa Chef recommends to use the real thing. Always remember, when cooking with wine, use what you would drink. If you ad a nasty wine to your food, your result will be less than favorable.

Meals Deliveries

Besides catering services, YaDa Chef also provides personal chef as well as meals in advance options to our clients.

With personal chef services, one of our chefs cooks and prepares your foods in your kitchen specific to your menu needs.

Meals in advance is similar. You choose the menu a week in advance, YaDa Chef will coordinate your deliveries the following week.

The price structure varies depending on what is needed. Often, our clients have specific needs and/or requests which we are able to provide foods which are not listed.

In addition to this, we have come up with a plan where people order off the same menu vs. our Standard Menus or our Special Diet Menus, and we are able to offer our foods at a discounted rate.

The requirement is that a minimum of four days worth of foods are ordered with at least two meals per day.

Connie and Karen, with Fire Power Seminars (www.firepowerseminars.com), forwarded a few pictures of last Saturday night's event. The first is of Bryan and Joseph bending a rather large piece of rebar with the ends on our throats. Joseph walking across hot coals. And the last is of Joseph breaking a broard. Each of these processes have significant meanings and represent a challenge, fear, or what-have-you to work through. Truly an exciting event and seminar.

Fire Power Seminars, Saturday Event

This past Saturday night, YaDa Chef provided foods for the Fire Power Seminars' (www.firepowerseminars.com) Saturday night firewalk and seminar.

The night was a huge success! With twenty some people in attendance, Connie and Karen guided the group through self realization exercises. From breaking boards, dealing with fear, walking on glass, and a host of other exercises.

If you are not familiar with Fire Power Seminars, they offer various corporate seminars tailored to fit your unique needs. Whether it's firewalking, board breaking, team building, communication or sales, you will experience an outrageous seminar like no other, that is stimulating, empowering and motivating. Our enthusiastic facilitators enable participants to surpass their expectation of what they believe is possible!

The Fire Power Seminars team brings over 65 years combined experience in Banking, Marketing, Advertising, Printing, Information Technology, Training and Professional Auto Racing.

The foods YaDa Chef provided for the break session were Asian Turkey Burgers with Wasabi Mayonnaise and Asian Pickled Cucumbers, Fresh Fruit, and Chocolate Sorbet. After the event, clients who flew in from the Midwest had a birthday celebration and YaDa Chef provided a Red Velvet Cake with Cream Cheese Frosting birthday cake along with a Rum Cake, heavily soaked.


Busy Summers Are The Norm For YaDa Chef

We apologize for the lack of blogging lately; YaDa Chef has been exceptionally busy this summer.

Being a full service catering company in Fort (Ft) Lauderdale, serving south Florida from the Palm Beaches to the Keys, we have been all over the map.

Providing foods and catering services to medical offices as well as corporate offices, large and small, hot and cold, we are finding that many areas prefer certain types of foods. For instance, one office may love our Bordeaux Chicken (fresh organic chicken with baby Portobello mushrooms and onions simmered in a light red wine reduction), another company prefers our beef teriyaki (tender thin slices of beef, sautéed with yellow and red peppers along with onions served with both brown and white rice).

We suppose this is what corporate catering is all about. Finding the best fit for the office we are providing foods. Our menus are simply a jumping off point for our clients. Many requests for foods are varied, and in most cases, we are able to provide what ever our client(s) may require.

One job last week consisted of fresh Maine lobster tails, beef wellington (filet mignon wrapped in puff pastry with a YaDa Chef special combination of fresh mushrooms and other secret ingredients), braised asparagus along with roasted potatoes. This special catering job was held in Fort (Ft) Lauderdale as a thank you to a select group of staff for a corporate office. These foods were served on china, not disposables, and two YaDa Chef servers were there to present and serve the foods.

Then we have our personal chef and meals in advance clients. Lately, the more popular of the two is the meals in advance service. Our clients determine their menu for the following week; YaDa Chef cooks the foods and delivers to each client twice a week according to their schedule.

One of our meals in advance clients has a special dietary needs and we have created, along with the help of his nutritionist, a menu which is gluten free, diary free, and a host of other requirements set to ensure his health.

Other meals in advance clients use us to help loose weight. Others simply want to make their life a little easier. Being too busy to have delicious and nutritious meals is not an option.

With our pricing schedule for meals in advance, the more meals which are ordered for each day, of the same type, the lower we are able to make the price. YaDa Chef is aware of budgets and appreciates the ability to save money.

Since all our foods are purchased from local grocers, and staying within the organic guidelines, the more foods we are able to buy in bulk, the better we are able to pass on the savings to our clients and customers.

This week’s catering jobs will range from north Palm Beach, Miami Beach, Fort (Ft) Lauderdale, Pembroke Pines, Miramar, Wilton Manors, Boca Raton, Key Largo, and a few other cities. We know it is often difficult to obtain quality fresh foods so we offer our services up and down the Florida coast.

YaDa Chef Recipe, Roasted Sweet Potatoes


This recipe calls for starting the potatoes in a cold oven. Choose potatoes that are as even in widith as possible; trimming the smaller ends prevents them from burning.

If you prefer not to peel the potatoes, scrub them well before cutting.

  • 3 lbs sweet potatoes (about 6 medium), ends trimmed, peeled, rinsed, and cut into 3/4 in thick rounds
  • 2 T vegetable oil
  • 1 t table salt
  • ground black pepper
  • nonstick cooking spray

Toss potatoes in a large bowl with oil, salt, and peper to taste until evenly coated. Line your baking sheet with foil and coat with nonstick cooking spray.

Arrange potatoes in a single layer on the baking sheet and cover tightly with aluminu foil. Adjust oven rack to the middle position and place the potatoes in a cold oven.

Turn oven to 425 degrees and cook potatoes for 30 minutes.

Remove baking sheet from oven and carefully remove the top layer of foil. Return potatoes to oven and cook until bottom edges of the potatoes are golden brown, about 15 to 25 minutes.

Remove the baking sheet from the oven and, using a thin metal spatula, flip slices over. Continue to roast until bottom edges of potatoes are golden brown, about an additional 18 to 22 minutes longer.

Remove from oven; let cool for 5 to 10 minutes, transfer to platter and serve.
