The shelf life of olive oil is about one year if unopened and about three months if opened.
Be sure and check the harvest date printed on the label to ensure the freshest bottle possible. There are a few brands which list an expiration date which is calculated, on average, 18 months from harvesting.
Store your olive oil in a dark pantry or cupboard as strong sunlight will oxidize the chlorophyll in the oil, producing stale and harsh flavors.
DO NOT buy olive in bulk, one you have opened the container the shelf life of the olive oil is relatively short. Unless you are planning on producing a huge amount of food, purchase your olive oils in small quantities.
To check for freshness, heat a small amount of olive oil in a skillet. If there is a rancid smell, toss the bottle. This testing procedure also works for all vegetable oils.
