When cooking shrimp, the underside tends to shrink more than the top. This causes the shrimp to curl tightly and often cook unevenly inside the curl.
To fix the problem, after peeling and deveining a shrimp, hold it on its back on a cutting board. Use the tip of a pairing knife to make two ¼ inch deep cuts on the underside about ½ inch apart.
