YaDa Chef advises against using or cooking with salted butter for several reasons.First, the salt content in salted butter will differ from brand to brand, ranging from 1.25% to 1.75% of the total weight. This makes it impossible to accurately create conversions that will work with all brands.
Second, salt masks some of the flavor distinctions found in butter. Salted butter has a different taste than that of unsalted butter.
And lastly, salted butter has a higher water content of than that of unsalted butter. The water in salted butter will range from 10% to 18%.
In baking, butter with a lower water content is preferred. Excess water will interfere with the development of gluten.
The texture of foods when using salted butter vs. unsalted often will come out a bit more mushy and pasty.
This is often why when baking a product will taste or cook or come out a little different each time when using salted butter and alternating brands.
