
1 tablespoon butter, unsalted, softened
3 medium garlic cloves, minced
1 teaspoon fresh thyme, chopped
2 teaspoons olive oil
1 pound green beans, cut into 2 inch pieces and stems cut off
1/4 cup water
2 teaspoons lemon juice
2 tablespoons fresh parsley, chopped
salt and pepper
Combine butter, garlic and thyme in small bowl then set aside.
Heat oil in nonstick skillet on medium heat.
Add beans, 1/4 teaspoon salt and 1/8 teaspoon pepper. Stirring occasionally, cook until brown.
Add water, cover and cook for about 2 minutes until beans are bright green and crisp.
Remove cover, increase heat to high setting and cook until water has evaporated, about 45 seconds.
Add butter mixture and continue to cook. Stir frequently until beans are lightly browned and begin to wrinkle, about 2 minutes longer.
Toss with lemon juice and parsley in serving bowl. Serve immediately.
Variation:
With Ginger and Sesame:
1 teaspoon sesame oil
1 teaspoon fresh ginger, grated
1 teaspoon chili-garlic paste
Combine three ingredients in small bowl and set aside.
Follow the above Sauteed Green Bean recipe. Substitute vegetable oil for olive oil and increase the vegetable oil 2 teaspoons.
Cook as directed.
Replace the butter mixture with sesame oil mixture omitting the lemon and parsley.
Sprinkle cooked beans with 2 teaspoons of toasted sesame seeds before serving.
